Mung Bean Croquettes Beans are wonderfully versatile and with the added kudzu and arrowroot both in this dish, you can attain a crispy exterior without the need for breadcrumbs. Feel free to add them if you wish along with your favorite herbs and spices.
2 Cups cooked mung beans 1 onion, chopped (any color) 1 good size carrot, shredded 2-4 T. chopped Parsley 1-2T. Rice bran oil 1 tsp. kudzu 2 T. Arrowroot Ume vinegar to taste, (several good sprinkles ought to do it.)
Sauté the onion in a small amount of the oil in a small fry pan, and mix all ingredients in a bowl. If your beans are dryer and the mixture won’t easily form into small patties then place all ingredients in a food processor and mix until it starts to get pasty. Form into small croquettes and fry in a larger pan in the remainder of the rice bran oil.
